Recipe: Carrot and Toasted Pine Nut Salad

Had a barbeque on sunday- Lovely! So nice to finally have a meal outside in my parent's sunny garden. We used one of those portable barbeques- they actually work pretty well! They look so puny i guess, but we cooked chicken, paneer, sausages and corn on the cob very successfully. I made a load of side salads to have with our sizzled meat, and this one came out on top. Very simple but delicious.

Carrot and Pine Nut Salad (serves 4 as a side dish)
5 carrots, peeled and grated
Handful fresh basil, finely chopped
1 tbsp lemon juice
2 tbsp French dressing
100g pine nuts, toasted
Salt and pepper to taste

1. Mix together all of the ingredients except the pine nuts.  Season to taste, top with the toasted pine nuts and serve!
