Carrot and Pine Nut Salad (serves 4 as a side dish)
5 carrots, peeled and gratedHandful fresh basil, finely chopped
1 tbsp lemon juice
2 tbsp French dressing
100g pine nuts, toasted
Salt and pepper to taste
1. Mix together all of the ingredients except the pine nuts. Season to taste, top with the toasted pine nuts and serve!
