300g Natural yoghurt
½ cucumber, seeded and finely chopped
2 tbsp fresh finely chopped mint
Squeeze of lemon juice
Salt and pepper to taste
Cayenne pepper or paprika for garnish
1. Mix all the ingredients together, season to taste, and serve with a sprinkling of cayenne or paprika for garnish! Perfect on the side of a tasty curry.
